Food | Vanilla & Strawberry Pancakes with Coconut Shavings


I know, I know, I’ve been gone for two weeks, no video, no post, nothing. But I have a very good reason.

Some time two weeks ago I was in so much pain that I decided I should go see a doctor, after almost 3 hours of ultrasound, after ultrasound, after ultrasound, they found out that my right kidney has a slight problem. So I decided to just take a break from everything and concentrate on my health cause I was even going through so much stress from end of semester term papers, that I was seriously going to lose it.

Queue Wednesday last week, had a bit of energy back, so wanted to film when the lovely flu decided it needed a new friend. Lost my voice, appetite and strength. I was just totally drained, but thankfully I’m getting better, although I feel like a chemistry experiment with all the pills I’m popping.

On Thursday, I woke up craving pancakes, so I decided why not, let me treat myself considering the only thing I have eaten in 2 weeks is soup, noodles and lots of toasted bread. Healthy right???

I love making pancakes, super easy and really filling. I tend to tweak the ingredients every time I make them and that’s the beauty of cooking, anything goes.

Prep Time; 2 min ~ Cook Time; 5 min ~ Total Time; 7 min


  • 1/4 cup all purpose flour
  • 1 Tablespoon baking powder
  • 1 Tablespoon castor sugar (or regular sugar)
  • 1 egg
  • 1/3 cup milk
  • 1 tablespoon cooking oil (or butter)
  • 2-3 drops vanilla
  • 3 long strawberries
  • pinch of salt.



  1. Sift all dry ingredients and add them into a separate bowl.
  2. Add all wet ingredients into a separate bowl.

3.In a separate jar or bowl, (I prefer a jar to help portion out when frying) mix the dry and wet ingredients. Stir until properly mixed and without any lumps. (I love using a mwiko i.e a wooden spoon :-p)

4.Cut up the strawberries (or whatever fruit of choice) into bite size pieces.


5.In a pan on low heat add 1 tablespoon to coat the entire pan.

6. Cook pancakes on both sides and enjoy.


  P.s; add the fruits will the batter is on the pan to avoid them from sinking in the jar or bowl.

Final Product;


Top with any toppings of your choice. I used store bought unsweetened coconut shavings
